Quinoa Salad

I walked into the local health store and decided to make a Quinoa salad with black lentils, fresh cucumbers and roasted zucchini. Spice it with an organic olive oil, coriander crushed Szechuan pepper, cumin and Atlantic salt.

Goat yogurt sauce- mix yogurt with olive oil, salt and black pepper to taste, 1 tsp of lemon juice, about 2 tsp. of chopped mint.

Ingredients:

1 cup of cooked Quinoa

1/2 cup cooked black lentils

1 small sliced red onion

1 small zucchini sliced thin

1 cucumber sliced any way you like.

1 tbs. olive oil, salt and black pepper to taste, 1/8 tsp. of Chinese 7 spices, 1/2 cup chopped coriander, 1 tsp. fresh lemon juice.

Stir fry onion and zucchini until soft

Mix all the ingredients and spice it according to your taste.
